For the Cinnamon Apples:
3 apples peeled and diced
2 tsp lemon juice
4 tbsp light brown sugar
2 tsp ground cinnamon
1/4 tsp nutmeg
For the Cookie Crumbs:
3/4 cups of vegan butter cookies
1. In a microwave-safe bowl, combine the apples with the sugar, cinnamon, nutmeg, and lemon juice.
2. Microwave for 3 minutes or until the apples are tender. Set aside to cool.
3. Place cookies into food processor and pulse until finely ground.
4. To assemble, layer the parfaits, starting with Banana Nicecream, then a layer of apples, a drizzle of Marple syrup, and sprinkle with cookie crumbs.
5. Dig in!
