Nicecream Christmas Cake

Looking for an impressive holiday dessert to indulge in that is surprisingly HEALTHY?🎄🍰 We're making all your dreams come true with this Nicecream Christmas Cake that is almost entirely made from FRUIT! We had to add in a touch of chocolate for good measure 😉
 
INGREDIENTS
Crust:
20 Oreo cookies
4 tbsp vegan butter, melted

Cake:
3 pints Banana Nicecream, softened
3 cups mixed berries, we used strawberries, raspberries, and blueberries (mix of fresh and frozen)
2 tbsp coconut flakes

INSTRUCTIONS
1. Grease a cake pan.
2. Melt butter in a large microwave safe bowl. Add to food processor with Oreos and blend and mix well to combine.
3. Pour crumbs into pie pan and press down along bottom and sides of pie pan. Freeze for 10 minutes.
4. Top Oreo layer with 1 pint of Banana Nicecream. Grab a handful of strawberries, thinly slice and press around the edge of the pan using some Nicecream as “glue”.
5. Place remaining Nicecream on top and freeze for 4 hours or overnight until firm.
6. To serve, transfer cake to a serving plate. Layer remaining berries and sprinkle coconut flakes on top!
