Spiced Pumpkin Lassi

 

Move aside PSL, our new favourite fall drink is this Spiced Pumpkin Lassi 🍂 It's the perfect blend of warm spices, a little sweetness, a kick from ginger, lemon for freshness, and super creamy with the addition of Nicecream.⁠ ⁠

Ingredients:
⅓ cup pumpkin puree⁠
½ pint Banana Nicecream⁠
⅔ cup unsweetened almond/coconut or other non-dairy milk⁠
1 teaspoon lemon juice⁠
1 ½ teaspoons maple syrup (or a soft date)⁠
¼ teaspoon ground cinnamon⁠
¼ teaspoon ground cardamom⁠ couple drops of vanilla extract⁠ tiny pinch of sea salt
Instructions:
1. In an upright blender, combine all ingredients.
2. Blend on high until the pumpkin lassi is completely smooth and creamy. Feel free to add more Nicecream if you prefer a thicker consistency.
3. Serve with a sprinkle of cinnamon, almond butter drizzles, and cinnamon on top if you like!⁠
