Vegan Berry Nicecream Cheesecake

Take a slice out of this mouthwatering Berry Nicecream Cheesecake! So easy, delicious and HEALTHY! Perfect for a summer soirée, birthday, or a night-in in your pjs.


10 strawberries for outside, cut in
half handful of blueberries for top
Berry Nicecream layer:
1 cup frozen blueberries
1 pint Strawberry Banana Nicecream
1 cup dates
splash of coconut water
Nicecream cheesecake layer:
2 cups cashews, soaked in water for 1-2 hours
1 pint Banana Nicecream
1 cup dates
1/4 cup melted coconut oil
1/2 teaspoons vanilla extract
1. Evenly space fresh blueberries on bottom of a cake pan. Place the halved strawberries around the edge. Set aside.
2. Blend all the Berry Nicecream layer ingredients together in a food processor until smooth. 3. Spread into the bottom of the pan, this should press the berries to the inner edge. Put in the freezer.
4. Blend all the Nicecream cheesecake ingredients together in food processor until smooth. 5. Carefully spread over top of the berry layer and put in the freezer for about 2 or 3 hours, until it's set.
Let it soften a little before eating for a perfectly creamy slice!
