Our favourite kind of recipe - the kind that doubles as breakfast AND dessert! This Sweet Potato Nicecream Sundae is a no-added-sugar, naturally vegan and gluten-free treat that will satisfy even the sweetest sweet tooth. Sweet potatoes are obviously naturally sweet, which makes them the perfect base for this Sundae. Packed with dietary fibre, vitamins, minerals and antioxidants, they taste just as good as they are nutritious.
Ingredients (for one sundae):
1 large sweet potato
2 scoops Banana Nicecream
toppings: peanut butter, coconut flakes, granola, cacao nibs, and coconut nectar.
1. Wash sweet potato, then pierce with fork (so it doesn't explode in the microwave) and wrap in lightly dampened paper towel. You can totally bake the potatoes in the oven too, but this way is much faster for when you're hangry.
2. Microwave sweet potato for 5 minutes. Place it back in the microwave for another 3-5 minutes, depending on how soft it is already. Let cool.
3. Top with Banana Nicecream, peanut butter, granola, coconut flakes, cacao nibs, coconut nectar and whatever else your heart desires!
