Watermelon Nicecream Cake

Is it a real party if there's no cake?⁠ ⁠This refreshing treat is 100% fruit (just like our Nicecream) and makes for the perfect centrepiece for you next summer soirée! Use your favourite fruit to customize the design and simply secure it all with wooden picks then serve with Mango Banana Nicecream.

2 watermelons⁠
Handful of your favourite fruits (we used peaches, raspberries, kiwis, strawberries, blueberries)⁠
3-4 mint leaves⁠
1 pint Mango Banana Nicecream

1. Slice off end pieces of watermelons. Cut watermelon flesh into 3 rectangular blocks. If your watermelons are on the smaller side, you can reduce the size of the rectangles, just be sure to scale them down evenly, and to cut all blocks to an even thickness.⁠
2. Use paper towel to dab each side of the watermelon block to remove some of the excess liquid.⁠
3. Place largest block on a cake plate, and insert 2 skewers into center (to secure the tiers); place next biggest block on top. Place smallest block of watermelon on top, creating a tiered cake appearance. ⁠
4. Decorate by arranging fruit and mint on all layers of cake (using wooden picks if needed, to help affix fruit). Slice and top with a Nicecream!
